Fresh pasta!

Over the weekend, we made the most amazing fresh pasta with rosé sauce. We made the recipe for pasta dough that came with our pasta roller and rolled it out super thin then sliced it into fettucine noodles. It was so delicious! The noodles stuck together a bit, but they were so good! For the rosé sauce, we improvised a basic alfredo sauce and added black pepper, garlic salt, onion flakes, parlsey, sage and oregano, then added a can of tomatoes. It was amazing! Definately worth making again!

We also made coconut almond dark chocolates in mini muffin papers by melting a dark chocolate bar over a double boiler then adding sliced almonds and coconut. Very good! But sorry, they were all gobbled up before we had the chance to get some photos.

Stuffed Mushroom Caps and Caramelized Onion Guacomole

Today, we were trying to decide what to have for dinner, so we decided to take this opportunity to cross some things off of the food list.

We made caramelized onion guacomole, inspired by the guacomole we saw once on the show The Best Thing I Ever Ate. We caramelized some onion then mixed it in with 2 mashed avocados, sour cream, onion powder, fresh thyme and black pepper. It was delicious, but next time we will chop the onions smaller.



One of the things on the food list is "stuffed something." We decided to stuff mushroom caps! We used the recipe for Stuffed Mushroom Caps on the food network app as a guideline. We first drizzled the caps in olive oil then put them in a 375 degree oven for 10 minutes. We filled them with goat cheese and sautéed garlic, mushroom stems, green onions and thyme. We put them in the oven for another 8 minutes. They turned out amazing! Next time we will use cream cheese and more green onions and thyme.


Two things crossed off the list in one day! A new record! We'll be making more soon!

Spicy Chocolate Cupcakes!

The second thing we can cross off of our food list! On the weekend, we made spicy chocolate cupcakes!

All we did was take our favourite chocolate cake recipe and added cayenne, black pepper and chilli peppers to taste. After we baked them, they weren't as spicy as we had expected, but they were still really good.

We iced them with chocolate buttercream then topped them off with a sprinkle of cayenne pepper.

Mango Salsa!

This afternoon we made mango salsa, the first thing we can cross off our list! We talked about getting the recipe from ali's aunt but decided to create our own original recipe. It was awesome!! Here it is!

  • 2 mangos, cut into small cubes (we only had one mango, which is ok but the mango wasn't the star of the show)
  • 1 small red onion
  • 1 1/2 tomatoes
  • fresh mint
  • dried basil
  • cayenne pepper
  • black pepper
We grilled 1 tomato and 3/4 of the red onion on our little george foreman grill. We cut them both into thick slices and removed the seeds from the tomato then threw them on the grill for a few minutes.
We chopped the mint and put it in a bowl with the mango and cut up the grilled vegetables and put them in too. The tomato kind of turned to mush so we added another half tomato, not grilled and the rest of the onion. We added more and more mint until we thought it was minty enough, a bit of dried basil and enough pepper so that it added a little kick. It was awesome! A good start to our food list. If you don't like one of the three main ingredients, mango, tomato or onion, you could definately leave it out. Delicious recipe that didn't take too long to make.


Sorry!

The day after the fine arts gala at school, we left for hay river and forgot about the blog. We didn't bake too much before leaving for the entire summer. Now we're both back and have some ideas to improve our blog!

In case you were wondering, the cupcakes sculpture turned out pretty awesome. Everyone that showed up to the arts gala (not too many people were there) loved it and most tried all four cupcakes. We had quite a few left over, but I think the Funky Fairies that didn't go to Hay River sold them at a bake sale the next day. The giant cupcake pan did not work for us. The top half completely cooked through before the bottom half, so we ended up scooping some of the raw batter out of the bottom and taking the top half out of the pan then putting the bottom back in for a couple more minutes.

Last night, we stayed up until 3am watching the Food network. The entire time, we kept saying, "that's sounds awesome!" and "we have to try that!" so we decided to create a list of all the things we want to try. Our Food List grew quickly with dishes that we want to try and ingredients that we want to cook with. so here it is!

Cupcake Sculpture : the making of

For the Fine Arts Night at our school, we are making a 2 foot tall cupcake display, featuring 4 different flavours of mini cupcakes and one giant cupcake on top.

Today we started baking the cupcakes. We made egg-free chocolate mini cupcakes, egg-free chocolate coconut mini cupcakes and vanilla almond mini cupcakes.

Black Forest Cupcakes

I made these Black Forest Cupcakes from Martha Stewart's Cupcakes. They were amazing! I used my own recipe for pastry cream and cherry pie filling. They could be made with any chocolate cake recipe.
